Spicy Carrots are the perfect side for Thanksgiving dinner or any meal that calls for the celebration of the fall harvest. The addition of elderberry flavoring creates a new taste that you must try!
Ingredients
- 2 pounds organic carrots, peeled, trimmed, and chopped into 1 to 2 inch pieces.
- 2 T extra-virgin olive oil
- Salt
- 1 & 1/4 cups apple cider
- 1/2 cup Elderberry Wellness Syrup
- 2 canned chipotle peppers, minced, with some extra adobo sauce
- Fresh ground pepper
- 2 T unsalted butter
- 2 T chopped cilantro
Directions
- Arrange the carrots in a single layer in a large skillet. Add the olive oil, a pinch of salt, the apple cider, the Elderberry Wellness Syrup and the minced chipotle peppers. Simmer over medium-low heat until the carrots are tender and the liquid is reduced and concentrated.
- Swirl in the butter, stirring to melt and coat the carrots. Add extra adobo sauce if more heat is needed.
- Stir in the chopped cilantro and a few grinds of fresh black pepper. Place in a serving bowl, being sure to include every bit of the wonderful glaze, and serve!
