peanut butter thumbprint cookies
If you are a peanut butter and jelly fan, these peanut butter thumbprint cookies are for you! Be sure to stir the organic peanut butter well to incorporate all of the peanut oil and solids before measuring the 1/2 cup peanut butter you need for this recipe.
Ingredients
- ½ cup smooth or chunky organic peanut butter
- ½ cup granulated sugar
- ½ cup packed brown sugar
- ½ cup butter, softened
- 1 egg
- 1¼ cup all-purpose flour
- ¾ teaspoon baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ¼ to ½ cup of your favorite Norm's Farms jam
Directions
- In a large mixing bowl, combine the peanut butter, the sugars, the butter and the egg, and beat at medium speed until light and fluffy. Add flour, baking soda, baking powder and salt. Mix together until soft dough forms and then cover and chill the dough for 3 to 4 hours, or until firm.
- Pre-heat oven to 375. Shape dough into 1-inch balls. Place balls 2 inches apart on ungreased cookie sheets. Indent top of each cookie with your thumb and then bake for 12 to 15 minutes, or until set.
- Immediately indent cookies again using the back of a spoon, and then spoon Elderberry Jam, Elderberry Jelly, Elderberry Ginger Pecan Jam or Blueberry Elderberry Preserves into each thumbprint. Cool completely before storing cookies in single layer.
