The fabulous Nikki Miller-Ka is the creator of this delicious summery dessert.  Nikki is a professional food blogger and food critic based in Winston-Salem, North Carolina, and she writes about local and regional restaurant trends, food organizations, and food producers on her blog, Nik Snacks. She is also the author of the Casual Dining column in the Greensboro, NC News and Record and is a tour guide for Taste Carolina Gourmet Food Tours. Nikki was classically trained at Le Cordon Bleu College Of Culinary Arts in Miami, so when she approached us with an offer to develop a recipe for Father’s Day with our products, of course we said “yes, PLEASE!”

Nikki used her amazing skills to develop several mouthwatering recipes and it was tough to pick just one. We settled on her inspiring Elderberry Ginger Icebox Cake using our Elderflower Syrup and Elderberry Jam because it was perfect for Father’s Day. This yummy no-bake cake features fluffy swirls of elderberry-laced cream layered with spicy gingersnaps, and is served cold. The deep elderberry flavor comes through in the whipped cream and in dollops of jam. It’s so easy to make and fun to assemble that you’ll want to include your kids in the fun.
