Cult Crackers with Goat Cheese and Berries and Norm's Farms Jam
Norm’s Farms partnered with the makers of organic Cult Crackers to create this slightly sweet and savory appetizer. Cult crackers are loaded with 6 different powerhouse seeds and are gluten free! We paired tangy goat cheese blended with Norm’s Farms Blueberry Elderberry Preserves and strawberries marinated in fresh thyme and balsamic vinegar to create a delicious topping that perfectly complements the delicious crunch of Cult Crackers. These appetizers are as pretty to look at as they are tasty to eat, and they are loaded with functional foods that deliver a nice nutritional and immunity boost, too. All you need is a few ingredients, a good mixer or food processor, and about 10 minutes to make these yummy appetizers. You can pre-assemble them if you like or allow your friends to create their own from the prepared ingredients.
Ingredients
- 6 ounces plain goat cheese, divided in two 3-ounce sections
- 3 Tablespoons Norm’s Farms Blueberry Elderberry Preserves
- ½ pound fresh strawberries, trimmed and sliced thin
- 1 tsp fresh thyme leaves
- 1 to 2 Tablespoons of balsamic vinegar
- One box Cult Crackers
Directions
- In a medium sized bowl, mix sliced strawberries with the fresh thyme and balsamic vinegar to taste. Allow to the strawberries to marinate in the thyme and vinegar for 10 minutes, then place in attractive serving bowl.
- Place 3 ounces of plain goat cheese in a mixing bowl or food processor. Add 3 Tablespoons of Norm’s Farms Blueberry Elderberry Preserves to the goat cheese and mix or process on high until fully blended. Place in a small attractive serving bowl and set aside.
- Place remaining plain goat cheese in a small attractive serving bowl.
- To pre-assemble the appetizers, smear each cracker with plain goat cheese, top with another smear of blueberry goat cheese, and top it all off with a few slices of strawberries. Serve immediately. Alternatively, allow your guests to assemble their own appetizers by arranging the ingredients in pretty serving bowls with small spreading knives.
