Greek Yogurt Parfait with Berries in an Elderberry Glaze
This Greek Yogurt Parfait is a decadent breakfast and a delicious dessert. The recipe only takes a few minutes to put together, and is a superb alternative to your typical store-bought, artificially-flavored yogurt!



Ingredients
  • 16 oz honey or vanilla flavored Organic Greek Yogurt (our favorite!)
  • 12 ripe strawberries, washed, trimmed and sliced thin
  • 20 ripe blackberries, washed
  • 4 oz Norm’s Farms Elderberry Jam
  • 2 tsp balsamic vinegar
Directions
  1. Gently melt the Elderberry Jam over very low heat, stirring frequently. When the jam is melted, add the balsamic vinegar and stir well to blend the flavors. Place prepared fruit in a medium sized bowl, drizzle the jam/balsamic vinegar glaze over the fruit, and mix well.
  2. Select 4 wine glasses or champagne flutes and carefully place a dollop (about 2 or 3 tablespoons) of Greek Yogurt in the bottom of each glass. Add several tablespoons of the glazed fruit and syrup to each glass, and continue to layer the yogurt and glazed fruit, finishing with the fruit. Try to use up every bit of glaze in the process, as you don’t want to miss a single drop! Makes 4 medium-sized parfaits
