Be Well Pops
A month or so ago when Rodger and I were working with Brittany and Devon in Purdy, an ice cream truck rolled through town playing that instantly recognizable jingle from my childhood. Without pausing a beat, I asked Rodger if he had any money with him. I wanted to chase that truck down and get a treat! Unfortunately, he was as cashless as me, so I had to watch the ice cream truck roll slowly away into a different part of town. Yes, if I’m honest, I felt dejected…. pretty much the same feeling I had when I was a kid and my folks determined that a popsicle from the ice cream truck wasn’t in the cards for that day. I’ve lived in one rural area or another, miles from any town, for most of my adult life. One of the trade-offs of living rurally is giving up access to those things people who live in towns enjoy, things like being able to walk to stores and restaurants, and as it turns out, ice cream trucks. I had completely forgotten about this quintessentially American experience. Seeing and hearing the ice cream truck roll by brought back many fun memories of eating popsicles and ice cream bars with my friends and siblings on a beautiful summer day. Those memories have filled my head since our visit to Purdy and the experience inspired me to create this recipe for our Be Well Pops. Be Well Pops are delicious! Even better, they can be a parent’s secret weapon for delivering a daily serving of elderberry to kids who don’t like the taste of it, because the elderflower syrup takes away every bit of tartness from the elderberry. Made with our Elderflower Syrup and our Elderberry Extract Children’s Formula Be Well Pops contain cold and flu fighting benefits parents want their kids to have, especially when summer gives way to the school year. - In a bowl, mix together the elderflower syrup and water.
- Add the juice of one fresh lemon. Stir quickly with a spoon until well incorporated.
- Pour this liquid into popsicle molds leaving about 1/3 inch head space.
- Place the molds in the freezer and freeze for 1 hour 20 minutes
- Remove the molds from the freezer. Working quickly, add one teaspoon Children’s Formula to each mold and then insert popsicle sticks.
- Return to the freezer and freeze until firm, about 4 hours.
- To remove the popsicles run the molds under hot water for 5 seconds and then pull the popsicles out of the molds.
- Store in the freezer in freezer-safe bags.
There are many options for popsicle molds. After doing some research I fell in love with these stainless-steel popsicle molds because they are made to last a life time, are completely bio-degradable and even better, they come with a great stand, about 50 bamboo popsicle sticks and a nice brush for cleaning the molds after use. Alternatively, should you decide to get plastic popsicle molds, we recommend that you get the BPA free kind.
