Kate's Cheese Ring
Katie Crenshaw from the food blog A Fork's Tale gets all the credit for creating the Super Bowl Cheddar Pecan Cheese Ring with Elderberry Jelly (click here for recipe). Rodger met Katie, the creator of A Fork's Tale at the Carolina Jubilee, a festival that raises money to help small farmers get off the ground.
Katie visited our booth at the festival last fall when she mentioned that she had a food blog and loved to eat adventurously. Rodger immediately gave her one each of all of our products and said, "if you like any of it and want to blog about it, or even create a recipe, that would be great".
Katie shares our passion for photography and food, and as she explains in her blog "Food is exciting to me. I love trying new foods; even the weird, foreign, and hard to pronounce kinds of foods. If you see an ingredient in my recipes that you have never tried; branch out and try it. Food should be an adventure. There is so much to experience. If you don’t like it, you can always get take out. But if you like it and love it…. Well I told you so!"
Elderberry totally qualifies as one of those "weird, foreign and hard to pronounce foods". In fact, the most common question we answer is "what's an elderberry"? We can't remember if Katie asked that question or not, but we do remember that she was excited to take on this new challenge.
A Fantastic Recipe Just in Time For the Superbowl
Katie posted her first recipe winner using an old family recipe and our Elderberry Jelly. The first thing I thought after giving her great recipe a try is "I'm bringing this to the Super Bowl party!" The savory nutty cheesy spread is perfectly balanced with the slightly tart and sweet elderberry jelly, and it is a clever take on the "chutney over cream cheese" snack we all know and love.
