Spicy Carrots
Spicy Carrots are the perfect side for Thanksgiving dinner or any meal that calls for the celebration of the fall harvest. The addition of elderberry flavoring creates a new taste that you must try!



Ingredients
  • 2 pounds organic carrots, peeled, trimmed, and chopped into 1 to 2 inch pieces.
  • 2 T extra-virgin olive oil
  • Salt
  • 1 & 1/4 cups apple cider
  • 1/2 cup Elderberry Wellness Syrup
  • 2 canned chipotle peppers, minced, with some extra adobo sauce
  • Fresh ground pepper
  • 2 T unsalted butter
  • 2 T chopped cilantro
Directions
  1. Arrange the carrots in a single layer in a large skillet.  Add the olive oil, a pinch of salt, the apple cider, the Elderberry Wellness Syrup and the minced chipotle peppers.  Simmer over medium-low heat until the carrots are tender and the liquid is reduced and concentrated.
  2. Swirl in the butter, stirring to melt and coat the carrots.  Add extra adobo sauce if more heat is needed.
  3. Stir in the chopped cilantro and a few grinds of fresh black pepper. Place in a serving bowl, being sure to include every bit of the wonderful glaze, and serve!
