Elderberry Glazed Pork Tenderloin

Ingredients
  • 2 TBLSP olive oil
  • 3 TBLSP Elderberry Jam
  • 2 TBLSP Dijon mustard
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • ½ tsp salt
  • 1 TBLSP lemon juice
  • 2- 1-lb. pork tenderloins, trimmed
  • 1 ½ cups Apple-Elder Chutney
Directions
  1. Mix together everything except the pork and chutney.  Trim tenderloins of any fat and toss with 1/2 of the glaze, reserving the rest for later. 
  2. Preheat an oven to 400 degrees.  Line a cookie sheet with foil and lightly spray the foil with oil.  Place the foil lined and oiled cookie sheet in the 400° oven for 10 minutes.
  3. Remove the hot sheet from the oven carefully and place prepared pork tenderloin on the cookie sheet and bake on the top rack for 15 minutes.
  4. Remove from oven and, using the reserved glaze, glaze the top side of the tenderloin and return to the oven's top shelf for another 10 minutes.
  5. Remove from oven and let rest for 10 minutes before serving with Apple Elderberry Chutney. Yield: 6 servings / ½ cup of glaze
