Tilapia is a firm, white fleshed, mild flavored fish that is low in calories, saturated fat, carbohydrates and sodium. Because of its vegetarian diet, tilapia is also very low in mercury. Tilapia have been a fish of choice for artisenal and commercial fisheries for thousands of years, and in biblical times the fish was often referred to as “St. Peter’s Fish.”
The great flavors of fruit, spice, ginger and hot pepper combine beautifully in this recipe for a tropical glaze that works perfectly with the fish. Try pairing it with roasted asparagus for an elegant, low calorie and healthy meal. This recipe serves 4, and only requires a total prep and cook time of about 30 minutes.
1 cup mango nectar
1/4 cup Elderberry Jam
2 tsp grated lime peel
2 T fresh squeezed lime juice
2 T honey
2 tsp peeled and minced fresh ginger
1 tsp ground cumin
1/4 tsp ground cinnamon
1 large jalapeno pepper, seeded and minced
salt and pepper
2 pounds tilapia filets, rinsed and patted dry.
Prepare grill or broiler.
Combine first 9 ingredients and a pinch of salt in a small saucepan, bring to a boil and stir until the jam has melted. Reduce heat and let simmer 18 minutes or until thick, stirring often.
Sprinkle fish with salt and pepper and place on a grill rack or broiler pan coated with cooking spray, skin side up. Cook for 5 minutes. Turn the fish, coat with the glaze and cook for 4 more minutes or until fish flakes. Serve with extra sauce and enjoy!
