Elderberry Margaritas are the perfect refreshing and fun way to get your daily serving of elderberry! The following recipe is for one margarita, and was created by Karen Grindler of Cedar Creek Therapeutic Riding Center. I asked Karen if she had named this amazing cocktail and she said “Yes, I call it Karen’s Margarita, but you are welcome to make your own!” Double the recipe for two, triple the recipe for three…you get the drift. And if you are ever in Columbia, Missouri, check out Cedar Creek and the amazing work they do!
3 fresh Limes
1 oz Agave syrup
1 oz warm water
2 oz tequila
1 oz elderberry juice
Margarita salt or Kosher Salt
Squeeze the juice from 2 limes into a clean glass. In a separate glass mix the warm water and Agave syrup and then add to the lime juice. Add the Tequila and the Elderberry juice to the lime and agave mixture and stir.
Margarita Glass Preparation:
Pour margarita salt or kosher salt onto small plate. Slice the remaining lime into small thin wedges. Use one lime wedge to wet the rim of the margarita glass and then dip the margarita glass into the salt.
Putting it all together:
Carefully add crushed ice to the margarita glass (being careful not to disturb the salted rim), and then top with the margarita mixture. Garnish the glass with a sliced lime. Enjoy!
