This Chocolate Mascarpone Elderberry Pie, another wonderful Food Fairy creation, takes only a few minutes to make and is a huge hit at every meal. Mascarpone is an Italian cheese made from cream, so the base of the pie is undeniably rich and creamy. Combined with semi-sweet chocolate and tasty elderberry, this pie is unlike any other! The flavors are rich, deep and even a small slice will satisfy the chocolate lover in everyone.
- 1 pre-made graham cracker crust or a pre-baked pastry shell
- 16 ounces mascarpone
- 6 ounces (1 cup) semi-sweet chocolate, melted
- 2 Tbsp crème de cassis
- 3 TBLSP Elderberry Jam
- Cream, for whipping
- Fresh raspberries or blackberries for garnish
Stir together the mascarpone and melted chocolate in a large bowl until blended and no white streaks remain. Next, stir in the crème de cassis and remaining ingredients.
Immediately spread the filling in the chocolate cookie crust.
Cover and refrigerate for at least one hour. Serve topped with whipped cream and berries. This decadent pie goes great with your favorite tea or coffee!
